Short answer: plain yoghurt is not ultra-processed, and flavoured yoghurt usually is. If you are asking “is yoghurt ultra processed?” the honest reply is that the chiller aisle holds both extremes — plain natural and Greek yoghurt sit in NOVA group 1, among the least processed foods you can buy in a packet, while most flavoured, fruit-corner and dessert-style pots are typically NOVA 4. The pot decides, and the ingredient list is where it tells you.
Is yoghurt ultra-processed?
Yoghurt is a useful case study in how the NOVA classification actually works, because the same shelf carries group 1 and group 4 products side by side. NOVA does not group foods by nutrients. It groups them by the extent and purpose of industrial processing, using four categories formalised by Carlos Monteiro and colleagues and adopted in the FAO 2019 report on ultra-processed foods.
Plain yoghurt is one of the FAO's named examples of a group 1 food. Milk plus live cultures, fermented. Nothing added that you could not add in a kitchen, and fermentation itself — one of the oldest preservation methods humans have — does not count as ultra-processing. On the NOVA map, a plain tub of natural yoghurt sits alongside fresh fruit, plain oats and milk itself.
Flavoured yoghurt is a different formulation. Most supermarket versions add sugars or non-sugar sweeteners, flavourings, sometimes colours, and often thickeners or modified starch to hold the texture together. Under NOVA, the non-sugar sweeteners, flavourings, colours and thickeners are markers of ultra-processing — ingredients and additive classes whose job is to imitate or enhance sensory qualities rather than preserve the food. One marker is enough to place a product in group 4. That is why the typical strawberry fruit-corner pot and the plain tub next to it land in different groups despite both being called yoghurt.
Is Greek yoghurt a UPF?
A common version of this search — often typed as “is Greek yogurt UPF” with the American spelling — deserves a clear answer: no, not if it is actually Greek yoghurt. The traditional product is milk and cultures, strained to remove whey. Straining is a physical step, not an ultra-processing marker, so authentic Greek yoghurt stays in NOVA group 1 with its unstrained cousin.
The caveat is the label “Greek-style”. Some Greek-style yoghurts reach their thickness the traditional way; others may use added cream, milk proteins or thickeners instead of straining. Added cream does not make a yoghurt ultra-processed. A thickener or gelling agent typically does. You cannot tell from the front of the pot, which is exactly the kind of ambiguity NOVA forces you to resolve by turning it over — or by scanning it with a UPF scanner and letting the app read the ingredient list for you.
Where flavoured yoghurt sits on the NOVA scale
If you want to pin down a flavoured yoghurt's NOVA group, ignore the fruit pictures and read the ingredients. The additions that typically tip a pot into group 4 are:
- Added sugars or sweeteners.Sugar alone is a group 2 culinary ingredient, but non-sugar sweeteners (sucralose, acesulfame K, steviol glycosides) are ultra-processing markers — and they are common in “light” and “no added sugar” ranges.
- Flavourings.“Natural flavouring” included. Under NOVA, flavourings exist to enhance or imitate sensory qualities, which is the definition of a group 4 marker.
- Modified starch, thickeners and gelling agents. These hold fruit preparations and low-fat textures together and are rarely used in home kitchens.
- Colours.Less common in yoghurt than in confectionery, but they appear in some brightly coloured kids' ranges — check the label rather than assuming.
Two categories deserve a closer look. Kids' yoghurts — the tubes, pouches and cartoon-fronted pots — are marketed on calcium and convenience, but most supermarket versions carry added sugars, flavourings and thickeners, which typically makes them NOVA 4. And the newer high-protein, dessert-style pots — the chocolate-and-caramel quarks and protein puddings — often combine added milk proteins with sweeteners and flavourings. They can be a deliberate, reasonable choice for a protein target, the same trade-off we cover in our look at protein powder, but they are formulations, not strained milk.
One nuance NOVA gets right and casual UPF lists get wrong: preservatives, antioxidants and stabilisers used purely for durability do not by themselves make a food ultra-processed. The FAO explicitly keeps foods with only preservative additions in group 3. In yoghurt this rarely matters — live cultures do the preserving — but it is worth carrying to the rest of the supermarket, where cheese and breakfast cereal show the same split between traditional products and industrial formulations.
Does NOVA 4 make a yoghurt unhealthy?
Not automatically, and it would be dishonest to pretend otherwise. NOVA classifies processing, not nutrition. A flavoured yoghurt still delivers protein and calcium; a NOVA 1 food can still be eaten badly. Ultra-processed and unhealthy are correlated, not synonymous.
The evidence for caution is real but mostly observational. A 2024 umbrella review in the BMJ covering around 9.9 million participants found higher ultra-processed food exposure consistently associated with 32 adverse health outcomes — associated, not proven to cause. The UK's Scientific Advisory Committee on Nutrition has looked at the same evidence and urged caution, concluding that most people are likely to benefit from eating fewer processed foods high in energy, saturated fat, salt and free sugars and low in fibre — without declaring UPF harmful independent of nutrients.
NOVA itself has limits worth knowing. When more than 150 experts classified the same foods in a 2022 study, they reached only fair agreement — a Fleiss kappa of roughly 0.32 to 0.34. Yoghurt with a fruit preparation is precisely the kind of borderline product where coders disagree. Treat the group as a strong signal about what is in the pot, not a verdict on your breakfast.
What to check on the label
Thirty seconds at the chiller is enough:
- Plain natural or Greek yoghurt: the list should read milk (or milk and cream) and live cultures. That is NOVA 1.
- Flavoured and fruit yoghurts: look for sweeteners, flavourings, modified starch, thickeners or colours. Any of them typically means NOVA 4.
- Greek-style: check whether thickness comes from straining and cream or from thickeners and added milk proteins.
- Kids' and high-protein pots: assume nothing. These ranges vary widely between brands and even between flavours in the same range.
The practical swap is old-fashioned and works: buy the big tub of plain yoghurt and add real fruit, a spoon of honey, or jam if you want it sweet. You control the sugar, you skip the flavourings and starch entirely, and per serving it usually costs less than the individual pots — whichever supermarket you are standing in. It is the same logic as choosing plain oats over extruded cereal or an unsweetened oat drink over a gum-and-oil formulation: keep the base food, do the last step yourself.
