Is granola ultra-processed? Made the traditional way — oats, nuts, seeds, a little oil, honey or maple syrup, baked until golden — no. That is a processed food at most, NOVA group 3, whether it comes out of your oven or a small producer's. But many supermarket granolas are built differently: glucose-fructose syrup instead of honey, flavourings instead of vanilla, sometimes protein isolates for the sports aisle. Those versions are typically NOVA 4. The awkward part is that the front of the box looks the same in both cases — same rustic photography, same oat-cluster promises. Only the ingredient list tells you which one you are holding.
That makes granola a textbook health-halo food: a category that reads as wholesome by default, where the actual answer runs from barely-processed to fully industrial. Here is where the line falls and how to spot it in the cereal aisle.
Is granola ultra-processed? The short version
The NOVA classification groups foods by the extent and purpose of industrial processing, not by nutrients. Group 1 is unprocessed or minimally processed food. Group 2 is culinary ingredients — oil, sugar, honey, salt. Group 3 is processed food: group 1 foods combined with group 2 ingredients, the way a kitchen would. Group 4 is ultra-processed food: industrial formulations built from derived substances and cosmetic additives.
Granola can land on either side of the group 3/4 line:
- Homemade or simple-recipe granola: oats, nuts and seeds are group 1; the oil, honey, maple syrup or plain sugar are group 2. Baking them together is exactly the sort of processing NOVA treats as benign. NOVA 3, comfortably.
- Many supermarket granolas:swap the honey for glucose-fructose syrup, add “natural flavouring”, and the product typically becomes NOVA 4. Protein granolas built on soy or whey protein isolate are further still from anything you could make at home.
Note what is missing from that second list: sugar. A granola can be a third sugar by weight and still be NOVA 3, because sugar and honey are culinary ingredients. NOVA measures processing, not sweetness — which is why it should never be your only lens on a cereal box.
Homemade granola: a kitchen recipe, not a formulation
The base recipe needs nothing industrial. Rolled oats, whatever nuts and seeds you have, a few spoonfuls of oil, honey or maple syrup to bind, maybe cinnamon, baked on a tray and broken into clusters. Under NOVA, that is a group 1 food combined with group 2 ingredients — the same category as a flapjack or a loaf of home-baked bread. There is no normal reading of the framework in which it counts as UPF.
The same applies to a bought granola whose label reads like that recipe. NOVA does not distinguish between your oven and a factory's; it asks what went in and why. Plenty of granolas on UK shelves, including some supermarket own-brand ones, keep to a short kitchen-style list. They just do not look any different from the boxes that do not.
Supermarket granola: where the halo slips
Commercial granola has commercial pressures: a price point that makes honey expensive, clusters that must survive the supply chain intact, and a taste that must be identical in every batch. Manufacturers solve these problems in ways a home baker would not, and the solutions are what move a box across the NOVA line.
- Glucose-fructose syrup(and its relatives, such as invert sugar syrup) is the big one — a cheap industrial sweetener and binder that NOVA treats as a marker of ultra-processing precisely because it is not something home kitchens use.
- Flavouringsstandardise taste across batches. “Natural flavouring” still counts — it is a cosmetic additive doing cosmetic work.
- Protein isolates turn granola into a sports product. Soy, pea or whey protein isolate is an industrial ingredient and a classic NOVA 4 marker, the same one that puts most protein powders in group 4.
- Emulsifiers and glazing agents used to shape and shine clusters point the same way when their job is texture and appearance rather than safety.
One caveat that most UPF commentary skips: an antioxidant or preservative on its own does not make a granola ultra-processed. Additives used purely to keep a food safe and stable are permitted in group 3 under NOVA — the group 4 markers are the cosmetic additives and industrial ingredients above. A short label with a single antioxidant is not a red flag.
We are deliberately not naming which brands fall on which side. Recipes change, and the same supermarket often shelves a NOVA 3 granola next to a NOVA 4 one in near-identical packaging — the luxury-looking box is no more likely to be the simple one. Check the bag in your hand, not the category.
Granola versus the rest of the cereal aisle
Context helps here. Most UK breakfast cereals are extruded, flavoured, fortified formulations — typically NOVA 4, as we cover in our post on breakfast cereal. Granola is unusual in that the category straddles the line: it is one of the few boxes in that aisle that can genuinely be a group 3 food, alongside porridge oats and plain wheat biscuits. Muesli, its unbaked cousin, is more often on the minimal side still — though the same syrup-and-flavouring caveats apply to toasted versions.
It is also worth being honest about the framework itself. Granola is exactly the sort of borderline product where NOVA coders disagree: when over 150 experts classified the same foods in a 2022 study (Braesco et al.), agreement was only fair — Fleiss kappa around 0.32 to 0.34. A granola with one ambiguous ingredient can reasonably be argued into either group. Treat the classification as a useful signal, not a verdict handed down from on high.
What to check on the label
Thirty seconds with the ingredient list settles most boxes:
- Look at the sweetener first.Honey, maple syrup or plain sugar — culinary ingredients, still group 3 territory. Glucose-fructose syrup or invert sugar syrup — typically NOVA 4.
- Scan for cosmetic additives. Flavourings, colours, non-sugar sweeteners or emulsifiers doing texture work are the markers that matter.
- Protein granola? If it lists a protein isolate, it is an industrial formulation, whatever the front of the pack says about oats.
- Check the sugar per 100g separately. A NOVA 3 granola can still carry more sugar than a biscuit. Processing and nutrition are different questions; ask both.

Does NOVA 4 make granola unhealthy?
No — and the caveat matters more for granola than for most foods, because the halo cuts both ways. A NOVA 4 granola still delivers oats, nuts, seeds and fibre; it is not in the same league as confectionery because a syrup appears on the label. Equally, a virtuous NOVA 3 granola can be one of the most sugar-dense things in your cupboard. Neither number on its own tells you whether it belongs in your breakfast.
The wider evidence deserves the same honesty. Large observational studies — including a 2024 umbrella review in the BMJ covering around 9.9 million participants — associate higher UPF intake with worse health outcomes. But those are associations, not proof of cause, and the UK's advisory committee, SACN, reviewed the field in 2023 and urged caution rather than declaring UPF independently harmful. The practical reading is modest: when two granolas cost the same, prefer the one with the shorter, more kitchen-like label and the lower sugar figure — and do not let either box's photography make the decision for you.
