Ask “is cheese ultra processed?” and you get the cleanest two-way split in the whole NOVA system. Traditional block or wheel cheese — milk, cultures, rennet, salt — is NOVA 3, a processed food, not an ultra-processed one. Processed cheese slices, spreads and strings, made with emulsifying salts and often colours, are NOVA 4. Same aisle, same word on the packet, different group entirely.
That makes cheese unusually easy to get right. With bread or breakfast cereal you have to read the label carefully to know where a product lands. With cheese, the form it takes — block versus slice, wedge versus spread — tells you most of the story before you pick it up. The label still decides, but the split is sharp.
Is cheese ultra-processed? What NOVA actually says
The NOVA classification, developed by Carlos Monteiro and colleagues at the University of São Paulo and adopted in the FAO's 2019 report, groups food by the extent and purpose of industrial processing rather than by nutrients. Group 1 is unprocessed or minimally processed food. Group 2 is culinary ingredients like salt, butter and oil. Group 3 is processed food — group 1 foods with group 2 ingredients added, chiefly for durability or flavour. Group 4 is ultra-processed food: industrial formulations built from substances derived from foods plus cosmetic additives, with little or no intact whole food left.
Monteiro's papers list traditional cheese in group 3 by name. Cheesemaking is old-fashioned preservation: milk is fermented with cultures, set with rennet, salted and ripened. Salt is a group 2 ingredient added to a group 1 food to make it keep — the textbook definition of a processed food. A wedge of Brie, a block of mature cheddar, a round of Wensleydale: typically NOVA 3, provided the ingredient list stays short.
Is cheddar UPF? Almost never, if it comes in a block
Cheddar is the specific question UK shoppers ask most, so here it is directly: block cheddar is not UPF. A standard block of own-label mature cheddar typically lists milk, salt, cultures and rennet — four ingredients, all at home in a farmhouse dairy. Under NOVA, that ingredient list is group 3. The same goes for most block and wheel cheeses across the counter: Lancashire, Caerphilly, Stilton, Parmesan.
Two hedges worth keeping. First, some coloured cheeses — Red Leicester and double Gloucester are the classic examples — use annatto, a colouring, and colours are a NOVA 4 marker, so a strict coder could move an annatto-coloured cheese up a group. This is exactly the kind of grey area where NOVA's reliability limits show: in Braesco et al.'s 2022 study, over 150 experts classifying the same foods reached only fair agreement (Fleiss kappa of roughly 0.32 to 0.34). Second, pre-grated cheese sometimes adds an anti-caking agent such as potato starch to stop clumping — another judgement call that depends on the coder and the label. The block is the safe bet; for anything else, check the ingredients.
Processed cheese slices and spreads: where NOVA 4 begins
Processed cheese slices sit in NOVA group 4, and the reason is in the name of one ingredient class: emulsifying salts. These keep the fat and protein from splitting when the product is melted, pressed into uniform squares and made to drape over a burger without going oily. You will not find emulsifying salts in a home kitchen, and under NOVA, emulsifiers are a defining marker of ultra-processing — additives used to engineer the sensory qualities of the final product.
Most supermarket versions of cheese slices, cheese spreads, squeezy cheese and cheese strings add more from the same toolbox: colours, flavourings, thickeners, modified starch. Any one of those markers is enough for group 4. Note what that does not mean: NOVA is a category, not a severity score. A slice with five additives is not “more ultra-processed” than a spread with two. Both are simply group 4.
Note also what does not tip a cheese into group 4. Preservatives and antioxidants used purely for durability do not, by themselves, make a food ultra-processed — the FAO report explicitly keeps such foods in group 3. The line is drawn at cosmetic additives: emulsifiers, colours, flavourings, sweeteners. That distinction is the single most useful thing to know when reading any label, cheese or otherwise.
NOVA 3 is not a health halo
Here is the honest part. A processing group is not a nutrition grade. Block cheddar may be NOVA 3, but it is also high in saturated fat and salt — and the UK's Scientific Advisory Committee on Nutrition, which reviewed processed foods and health in 2023 and again in 2025, concluded that most people are likely to benefit from cutting back on processed foods high in energy, saturated fat, salt and free sugars and low in fibre. SACN has not concluded that UPF is harmful independent of nutrient content; it points back to the nutrients — and on saturated fat and salt, a NOVA 3 cheddar is no exception.
So the two-way cheese split answers the processing question, not the health one. Ultra-processed and unhealthy are correlated, not synonymous — and the reverse holds too: NOVA 3 does not mean eat freely. This is why Cull scores nutrition, additives and processing as three separate factors rather than collapsing them into one. What to check on the label
- The short list.Milk, salt, cultures (or lactic cultures), rennet. That is a traditional cheese — typically NOVA 3.
- Emulsifying salts. The clearest NOVA 4 marker in this aisle. If they are listed, the product is processed cheese, not cheese.
- Colours, flavourings, thickeners, modified starch. Cosmetic additives — any one typically marks group 4.
- The word “cheese” doing heavy lifting. “Cheese food”, “cheese flavour slices” and “cheese alternative” are formulations, not cheese — read the list, not the front of the packet.
- Preservatives alone are not the tell. A preservative or antioxidant for shelf life does not make a food ultra-processed under NOVA. Look for the cosmetic additives instead.
