Is porridge ultra-processed? Plain oats — rolled, jumbo, steel-cut, even the plain instant kind — are not. They sit in NOVA group 1, the least processed category the system has, alongside fresh vegetables and plain milk. A bag of supermarket own-brand oats is arguably the cheapest minimally processed breakfast in the UK. Flavoured instant sachets are a different product: once flavourings and sweeteners arrive, they typically land in NOVA group 4. Same aisle, same grain, opposite ends of the processing scale.
That range is what makes porridge worth a post. Most foods we cover — bread, cereal, houmous — live on the border between groups 3 and 4. Oats run the full length of the scale, from group 1 to group 4, within a metre of shelf. If you want to understand what ultra-processing actually means, the porridge aisle is the cleanest demonstration in the shop.
Are oats UPF? The short version
The NOVA classification groups foods by the extent and purpose of industrial processing, not by nutrients. Group 1 is unprocessed or minimally processed food — including foods that have been dried, milled, rolled or pasteurised. Group 2 is culinary ingredients like sugar, oil and salt. Group 3 is processed food: group 1 foods with group 2 ingredients added. Group 4 is ultra-processed food — industrial formulations with cosmetic additives and ingredients rarely found in home kitchens.
Porridge products span almost the whole system:
- Plain oats:rolled, jumbo, steel-cut or instant — NOVA 1. The processing is steaming, flaking and cutting a whole grain. Nothing is added.
- Oats with added sugar or salt only:a simple sweetened porridge mix sits in NOVA 3 territory — a group 1 food plus group 2 ingredients, the same logic as tinned fruit in syrup.
- Flavoured instant sachets and pots: flavourings, sweeteners, milk powders and built sugar systems typically make these NOVA 4.
The word “instant” does none of the work here. Plain instant oats are still group 1. The flavour sachet is where the group changes.
Why plain oats are NOVA 1 — even instant ones
An oat goes through real machinery on its way to the bag: it is dehulled, steamed to stop its enzymes turning the fat rancid, then rolled flat or cut. Jumbo oats are rolled whole; standard porridge oats are cut then rolled; instant oats are rolled thinner and partially cooked so they soften in a microwave. That is more physical processing than most group 1 foods get.
NOVA does not mind. The framework asks what processing is for, and whether it introduces industrial substances — not how much machinery was involved. Steaming and rolling exist to make a whole grain edible, stable and quick to cook. No fractions of the oat are removed and reassembled, nothing is added, and there is no additive of any kind. Under NOVA that is minimal processing by definition, the same category as freezing peas or milling flour. Rolled thinner is not ultra-processed; it is just thinner.
This is why oats make such a useful counter-example. Much of the UPF conversation slides into treating “processed at all” as the problem. A bag of oats has been through a factory and remains one of the least processed, highest-fibre foods you can buy — typically for well under a pound per half kilo at supermarket own-brand prices. Processing is a scale, not a stain.
Flavoured sachets: where porridge becomes UPF
The sachets and microwave pots are built differently. To make a golden-syrup-flavour or berry-flavour porridge taste consistent from a kettle in ninety seconds, manufacturers typically reach for flavourings, and often sweeteners, milk powders, or sugar and syrup powders blended for the product. Under NOVA those are the markers that matter: flavourings, colours and non-sugar sweeteners are cosmetic additives, and their presence typically places a product in group 4.
The hedging is deliberate. Recipes vary between ranges and change without notice, and some sachets keep it short — oats, sugar, salt, perhaps freeze-dried fruit. That recipe is not ultra-processed; it is a NOVA 3 sweetened food you could assemble at home. We are not going to tell you which named products fall on which side, because that is exactly the claim that goes stale. The ingredient list on the box in your hand is the answer, and it takes thirty seconds to read.
It is also worth saying what does not tip porridge into group 4. A preservative, antioxidant or stabiliser used alone to keep a product safe and stable is a group 3 matter under NOVA, not a group 4 one — though in practice plain oats need none of them. The genuine group 4 markers are cosmetic: flavourings, colours, sweeteners, emulsifier systems doing texture work, and industrial ingredients like protein isolates or glucose-fructose syrup that no home kitchen stocks.
Porridge next to the cereal boxes
Zoom out one aisle and the pattern sharpens. As we covered in our post on breakfast cereal, most UK cereals are extruded, flavoured and fortified into solid NOVA 4 territory — porridge oats and plain wheat biscuits are the standing exceptions. Granola runs the same gradient as porridge: a home-baked or short-label version is oats, oil and honey, while many bagged versions carry flavourings and syrup blends. The rule that emerges is boringly consistent. The closer a breakfast is to a recognisable grain, the lower its NOVA group tends to be; the more it has been shaped, flavoured and standardised for convenience, the higher.
Borderline cases exist, and honesty requires admitting NOVA handles them imperfectly. When over 150 experts classified the same foods in a 2022 study (Braesco et al.), agreement was only fair — a Fleiss kappa of about 0.32 to 0.34 — and a sweetened oat pot with one flavouring is exactly the kind of product coders argue over. Plain oats, though, are not a borderline case. Nobody codes them as anything but group 1.
What to check on the label
- “100% oats” or a one-ingredient list: NOVA 1, whatever the flake size, whatever the price.
- Oats plus sugar, salt or dried fruit:sweetened, but not ultra-processed — typically NOVA 3.
- “Flavouring”, sweeteners, milk powders, syrup powders: the additions that typically make a sachet NOVA 4.
- Compare the sugar per made-up serving.The gap between a flavoured sachet and plain oats with a spoon of jam is often smaller than the NOVA gap suggests — and sometimes it is not. The nutrition panel settles that one.

Is NOVA 4 porridge actually bad for you?
Not automatically. A flavoured sachet is still mostly oats, and oats bring fibre and beta-glucan whichever group the finished product lands in. Ultra-processed and unhealthy are correlated across whole diets, not synonymous for individual foods — a porridge pot is not in the same league as confectionery because a flavouring appears on its label.
The wider evidence deserves the same care. Large observational studies, including a 2024 umbrella review in the BMJ, consistently associate higher UPF intake with worse health outcomes — but association is not causation, and the UK's advisory committee, SACN, reviewed the field in 2023 and remained deliberately cautious about treating processing itself as the harm. The practical reading for breakfast is modest: plain oats are cheaper per bowl than any sachet, take three minutes in a microwave, and let you control the sugar. That is a good trade on every axis, no alarm required. And if the flavoured pot is what gets you eating porridge instead of skipping breakfast, it is still a bowl that is mostly oats.
