Is peanut butter ultra-processed? A jar of 100% peanuts — no. That is a minimally processed food under any honest reading of the NOVA system, and it sits on the same UK shelf as everything else. The classic sweetened jar — peanuts, palm oil, sugar, salt — is where most people guess wrong: those additions typically make it a processed food, NOVA group 3, not an ultra-processed one. The genuinely NOVA 4 peanut spreads are a narrower set: low-fat, whipped or flavoured versions built with flavourings, sweeteners, protein isolates or hydrogenated fats. As ever, the ingredient list on the back decides, not the category.
Peanut butter is a useful food for testing whether someone actually understands the UPF debate, because the lazy answer — “it has palm oil, so it is UPF” — is wrong. This post walks through where the real line is.
Is peanut butter ultra-processed? The short version
The NOVA classification groups foods by the extent and purpose of industrial processing, not by nutrients. Group 1 is unprocessed or minimally processed food. Group 2 is culinary ingredients like oil, sugar and salt. Group 3 is processed food — group 1 foods with group 2 ingredients added, usually to keep them or improve flavour. Group 4 is ultra-processed food: industrial formulations built from derived substances and cosmetic additives.
Peanut butter can land in three of those four groups:
- 100% peanuts:roasted and ground, sometimes with nothing else in the jar. That is group 1 — minimally processed. Add salt and you are at most in group 3. Either way, nowhere near ultra-processed.
- The classic sweetened jar:peanuts plus palm oil, sugar and salt. Those are all group 2 culinary ingredients added to a group 1 food — which is the textbook definition of a processed food, NOVA 3. Not UPF.
- The engineered spreads:add flavourings, non-sugar sweeteners, protein isolates or a hydrogenated-fat system — common moves in some low-fat, whipped or dessert-flavoured versions — and the product typically becomes NOVA 4.
100% peanuts: grinding is not ultra-processing
NOVA draws no distinction between your food processor and a factory mill. Roasting peanuts and grinding them into a paste is the same category of processing as milling oats or pressing olives — physical transformation of a whole food, which the framework treats as minimal. Most UK supermarkets now sell a 100% peanuts jar, including own-brand versions, usually shelved next to the sweetened ones at a similar price.
The visible difference is the layer of oil on top. Pure ground peanuts separate; that is what peanut paste does without a stabilising fat. It is an inconvenience, not a warning sign — stir it back in.
Palm oil, sugar and salt: processed, not ultra-processed
This is the nuance the palm-oil discourse flattens. Manufacturers add a small amount of palm oil (or another stabilising fat) to stop the separation, plus sugar and salt for the familiar taste. Palm oil has real environmental and saturated-fat questions attached to it, but under NOVA it is simply an oil — a group 2 culinary ingredient, the same category as the olive oil in your kitchen. Peanuts plus oil, sugar and salt is a group 1 food combined with group 2 ingredients: NOVA 3, a processed food.
So a standard sweetened peanut butter — the kind that ends up in a meal deal sandwich — is typically not ultra-processed, whatever its other trade-offs. Calling it UPF overclaims, and overclaiming is how the term loses meaning. It is worth saying NOVA's own edges are fuzzy here: fully hardened or hydrogenated versions of these fats are treated by many coders as an industrial ingredient rather than a kitchen one, and a 2022 study by Braesco and colleagues found even trained experts reach only fair agreement when classifying real products (Fleiss kappa around 0.32 to 0.34). Borderline jars are exactly where honest people disagree.
The genuine NOVA 4 markers in peanut spreads
Under NOVA, additives are not all equal. Preservatives, antioxidants and stabilisers used purely to keep a food safe and stable are permitted in group 3 — a stabiliser alone does not make a spread ultra-processed. The group 4 markers are cosmetic additives and ingredients rarely used in home kitchens:
- Flavourings and colours— common in chocolate, caramel or “dessert” flavoured spreads.
- Non-sugar sweeteners— a frequent move in reduced-sugar or “light” versions.
- Protein isolates— the signature of high-protein and powdered peanut products. If you have read our post on protein powder, this marker will look familiar: isolates are an industrial ingredient, and spreads built on them are typically NOVA 4.
- Hydrogenated-fat systems— where the texture is engineered with hardened fats rather than a simple oil, as in some low-fat or whipped spreads.
Emulsifier systems sit in the murky middle. An emulsifier doing the same stabilising job as palm oil arguably belongs with the group 3 additions; a multi-additive system engineering a whipped texture reads more like cosmetic work, which is group 4 territory. This is one of the places NOVA's categories genuinely blur, and we would rather say so than pretend the line is sharp.
What to check on the label
Thirty seconds with the ingredient list settles most jars:
- Peanuts only, or peanuts and salt? Minimally processed. Done.
- Peanuts, palm oil, sugar, salt?A processed food — NOVA 3 — not an ultra-processed one.
- Flavourings, sweeteners, protein isolates or hydrogenated fat? These are the additions that typically make it NOVA 4.
- Check the peanut percentage too. UK labels state it. A high-peanut jar with three additions and a low-peanut spread with ten are different products wearing the same name.

Does NOVA 4 make a peanut spread unhealthy?
No — and this caveat is not optional. Ultra-processed and unhealthy are correlated, not synonymous. Whichever group it lands in, a peanut spread is still mostly peanuts: protein, fibre and largely unsaturated fat. A flavoured spread with one flavouring is not suddenly in the same league as confectionery because of the NOVA label.
The wider evidence deserves the same honesty. Large studies — including a 2024 umbrella review in the BMJ covering around 9.9 million participants — associate higher UPF intake with worse health outcomes. But those are observational associations, not proof of cause, and almost none of that research is about foods like peanut butter. The UK's advisory committee, SACN, reviewed the field in 2023 and urged caution rather than declaring UPF independently harmful.
The practical reading is modest: the 100% peanuts jar is usually the better buy when prices match, the classic sweetened jar is a processed food rather than a UPF problem, and the engineered spreads are worth a label check before they go in the trolley. Knowing which group your jar is in is information, not a verdict.
