Is sourdough ultra-processed? Real sourdough — flour, water, salt and a live starter culture, fermented over hours or days — is not. That recipe predates industrial food processing by a few thousand years, and under the NOVA system it is a group 3 processed food — the framework's own textbook bread example, group 1 flour and water combined with group 2 salt. The complication is that much of what UK supermarkets sell as sourdough is not made that way. Campaigners call it sourfaux: loaves leavened with baker's yeast, soured with agents such as vinegar or yoghurt powder instead of long fermentation, and sometimes carrying emulsifiers or flavourings. Those loaves can tip into NOVA 4. Same word on the packet, different food underneath — and the only way to tell is the ingredient list.
That gap between the name and the recipe makes sourdough the most label-dependent bread on the shelf. This post walks through where the line falls and what to look for.
Is sourdough ultra-processed? The short version
The NOVA classification groups foods by the extent and purpose of industrial processing, not by nutrients. Group 1 is unprocessed or minimally processed food. Group 2 is culinary ingredients like oil and salt. Group 3 is processed food — group 1 foods combined with group 2 ingredients. Group 4 is ultra-processed food: industrial formulations built from derived substances and cosmetic additives.
Sourdough can land on either side of the group 3/4 line:
- Real sourdough:flour and water are group 1, salt is group 2, and the starter is just flour and water that wild yeasts and bacteria have colonised. Long fermentation is a technique, not an additive. This is NOVA group 3 — traditional bread-making, whether it happens in your kitchen or a small bakery. The only honest ambiguity for bread sits at the 3/4 line, not below it.
- Sourfaux:a fast-made loaf that borrows the name. Baker's yeast does the rising, a souring agent supplies the tang, and the recipe may add emulsifiers, flavourings or a longer additive system to hold texture and shelf life. Add genuine NOVA 4 markers and the loaf typically becomes ultra-processed.
Neither version is defined in UK law. “Sourdough” on a label carries no legal requirement about how the bread was leavened, which is why the same word can describe both foods.
What real sourdough actually is
The traditional method needs four things: flour, water, salt and time. A starter culture — wild yeast and lactic acid bacteria living in a flour-and-water paste — both raises the dough and sours it. The acidity is a by-product of fermentation, not an ingredient. Under NOVA, fermenting group 1 foods is explicitly minimal processing, the same category as turning milk into plain yoghurt. Under any normal reading of NOVA, this is about as clear a non-UPF as bread gets.
NOVA does not care whether the loaf came from your oven, a neighbourhood bakery or a supermarket's in-store bakery. It cares what went in. A supermarket loaf whose label reads flour, water, salt — perhaps with a rice-flour dusting — is the real thing wherever it was baked.
The sourfaux problem
Long fermentation is slow, and slow is expensive. Industrial bakeries solved that decades ago — the Chorleywood process, which we cover in our post on supermarket bread, swaps long fermentation for fast yeast, intense mixing and functional additives. A sourfaux loaf applies the same economics to sourdough's image: keep the speed, then add the sourness back in. Vinegar, dried sourdough powder used for flavour rather than leavening, fermented flour, yoghurt powder — different routes to the same imitation.
The Real Bread Campaign has spent years pushing for an honest legal definition of sourdough in the UK precisely because of this gap. Until a legal definition exists, the packet name settles nothing. Supermarket own-brand sourdoughs, meal-deal sandwiches on “sourdough”, and the bloomers on the in-store bakery shelf all vary; some are made honestly, some are not, and recipes change. We are not naming brands — check the loaf in your hand, not the category.
Which ingredients actually matter
This is where precision matters, because sourfaux is not automatically NOVA 4. Under NOVA, the group 3/4 line is drawn at markers of ultra-processing: additives whose job is cosmetic — imitating, enhancing or standardising flavour, colour and texture — and industrial ingredients rarely used in home kitchens.
- Not markers on their own:baker's yeast is a normal culinary ingredient — a yeasted loaf is not UPF for being yeasted. Vinegar is a normal culinary ingredient too. Preservatives such as calcium propionate, used to keep a wrapped loaf mould-free, sit in group 3 — a preservative alone does not make bread ultra-processed.
- Borderline:yoghurt powder is a spray-dried industrial dairy ingredient you would rarely find in a home kitchen, and many NOVA coders would read it as an ultra-processing marker — a loaf carrying it is typically borderline to group 4, so check the rest of the label. Soya flour is a hint in the same direction rather than a verdict.
- Typical NOVA 4 markers: emulsifiers such as mono- and diglycerides of fatty acids (E471) or DATEM, flavourings, and industrial sweeteners and starches such as glucose-fructose syrup or maltodextrin. One caveat: enzymes used as processing aids in industrial baking are usually not declared on UK ingredient lists at all, so the label cannot tell you about them either way.
Honesty requires a caveat here. A loaf soured with vinegar to imitate fermentation is doing something NOVA regards with suspicion — using an ingredient to mimic a sensory quality — yet vinegar itself is not an additive, so strict coders can reasonably place that loaf in group 3. This is exactly the kind of borderline product where NOVA's reliability wobbles: when over 150 experts classified the same foods in a 2022 study by Braesco and colleagues, agreement was only fair (Fleiss kappa around 0.32 to 0.34). A yeasted, vinegar-soured loaf with no other additives is ambiguous. One with emulsifiers or flavourings is not — those typically settle it as NOVA 4.
What to check on the label
Thirty seconds with the ingredient list settles most loaves:
- Flour, water, salt, starter — and little else? Typically real sourdough, whoever baked it — scan the rest of the list for emulsifiers or flavourings before deciding.
- Yeast on the list?The loaf was not raised the traditional way. That makes it ordinary bread trading on the name — not necessarily UPF, but not what the packet implies either.
- Vinegar, yoghurt powder or dried sourdough “flavour”? Souring agents standing in for fermentation. Vinegar alone is borderline under NOVA; yoghurt powder leans closer to group 4. A clear sign of sourfaux either way.
- Emulsifiers, flavourings, or a long additive list? E471, DATEM, “flavouring” — these are the additions that typically make a loaf NOVA 4.
Or skip the memorisation: Cull's UPF scannerreads the label for you. Scan the barcode and you get the loaf's NOVA group, its additives, and an overall score in about a second — useful when three “sourdoughs” at three prices are sitting on the same shelf.
Does sourfaux make it unhealthy?
No — and this caveat is not optional. Ultra-processed and unhealthy are correlated, not synonymous. A yeasted supermarket sourdough is still bread: flour, some fibre, roughly the nutrition of the loaf next to it. The honest complaints about sourfaux are about labelling and value — paying a premium for a slow-fermented product and getting a fast-made one — more than about acute harm.
The wider UPF evidence deserves the same care. Large observational studies, including Lane et al.'s 2024 umbrella review in the BMJ covering around 9.9 million participants, report associations between higher UPF intake and a range of adverse health outcomes, with varying certainty of evidence — and association is not causation, and industrial bread is only one strand of that research. SACN's 2023 position statement urged caution rather than declaring UPF independently harmful.
The practical reading is modest: if you are paying sourdough prices, the label should read like sourdough — flour, water, salt, time. When it does not, you are usually better off either buying the honest ordinary loaf for less or the real thing from a bakery. Either way, the packet name is the least reliable word on the wrapper.
