Are baked beans ultra-processed? Usually not — and that surprises almost everyone. A classic tin of beans in tomato sauce with sugar, salt and a little starch is a NOVA group 3 processed food, not a NOVA 4 ultra-processed one. It only tips into UPF territory when a specific product adds markers like flavourings, sweeteners or flavour enhancers, so the honest answer lives on the label of the tin in your hand.
Are baked beans ultra-processed? The short answer
Baked beans sit at the centre of the UK's ultra-processed food debate for a simple reason: they look like the archetypal UPF. A supermarket tin, a long shelf life, a national brand, an orange sauce. If you judged the baked beans NOVA group by vibes, you would file them under group 4 without a second thought.
NOVA does not work on vibes. The NOVA classification, developed by Carlos Monteiro and colleagues at the University of São Paulo, groups foods by the extent and purpose of industrial processing — and it draws the line between group 3 and group 4 at specific marker ingredients, not at tins, packets or brand names. Beans plus tomato sauce plus sugar, salt and starch is a recipe made from whole foods and kitchen-cupboard ingredients. Under NOVA, that is a processed food: group 3.
The Food and Agriculture Organization's 2019 report on NOVA defines group 3 as foods made by adding culinary ingredients — salt, sugar, oil — to whole foods, chiefly to increase durability or enhance flavour. Canned legumes are one of its named examples. A tin of baked beans is, at its core, canned legumes in a seasoned sauce. That is why dietitians who actually apply the criteria, rather than assuming, have landed on group 3 for the classic recipe.
What turns baked beans into a UPF
None of this means every tin on the shelf is safe from the baked beans UPF question. NOVA group 4 is triggered by markers of ultra-processing: ingredients rarely used in home kitchens, and additives whose purpose is cosmetic — to imitate or enhance flavour, colour or texture. For baked beans, the ones to watch are:
- Flavourings.The word “flavouring” or “natural flavouring” on the list is a group 4 marker. Some sauced or seasoned variants — barbecue, curry, sausages included — are more likely to carry them.
- Non-sugar sweeteners. Some reduced-sugar versions swap sugar for sweeteners such as sucralose or steviol glycosides. That swap typically moves the tin from group 3 to group 4.
- Flavour enhancers. Monosodium glutamate and other flavour enhancers are markers.
- Colours and emulsifiers. Rare in plain beans, more plausible in variants with sauces, cheese or meat.
One genuine marker is enough to make a product NOVA 4 — and, equally, two markers do not make it “more” ultra-processed. NOVA is a four-group category, not a severity scale.
Just as important is what does not count. Under NOVA, preservatives, antioxidants and stabilisers used purely for durability do not by themselves make a food ultra-processed — the framework explicitly keeps foods like fruits in syrup with added antioxidants in group 3. A modest amount of starch to thicken the sauce does not change the picture either. The classic recipe survives the test.
What to check on the label
You do not need to memorise additive numbers. For baked beans, a thirty-second label check answers the question:
- Count the recognisable ingredients.Beans, tomatoes, water, sugar, salt, starch, spice extracts, perhaps an acidity regulator — that reads like group 3.
- Scan for the four marker words: flavouring, sweetener, flavour enhancer, colour. Any of them and the tin is likely NOVA 4.
- Treat variants as different products.Plain beans, reduced-sugar beans and beans with sausages from the same brand can land in different NOVA groups. Most supermarket own-label plain beans keep a short list, but recipes vary and change — check the tin, not the brand.
- Ignore the front of the pack. NOVA is decided entirely by the ingredient list on the back.

Processed is not the same as unhealthy — or healthy
A NOVA 3 verdict is not a nutrition medal. NOVA classifies processing, not nutrients, and the two are correlated rather than synonymous. Baked beans are built on legumes, which is a genuinely good starting point — but tins vary in salt and sugar, and that is exactly where UK guidance points. SACN, the UK's Scientific Advisory Committee on Nutrition, has declined to treat UPF as an independently harmful category; its measured position is that most people are likely to benefit from eating fewer processed foods high in energy, saturated fat, salt and free sugars and low in fibre. For baked beans, that means comparing the salt and sugar figures between tins matters at least as much as the NOVA group.
The wider evidence deserves the same honesty. A 2024 umbrella review in the BMJ covering around 9.9 million participants found higher UPF exposure consistently associated with 32 adverse health outcomes — but those are associations from observational cohorts, not proof of cause. The one notable randomised trial, Hall and colleagues in 2019, found people ate about 500 kcal more per day on an ultra-processed diet — a real causal signal, but from one small, short inpatient study. None of that evidence says anything specific about a tin of beans in tomato sauce. It argues for reading labels, not for fearing them.
Why baked beans are the best argument for checking, not assuming
Baked beans matter to the UPF conversation out of all proportion to their ingredient list, because they expose the weakness of judging food by category. Roughly 50 to 57 per cent of UK adults' energy intake comes from ultra-processed food, and the instinct to sort the weekly shop into “UPF” and “not UPF” by eye is understandable. But the sorting is harder than it looks even for professionals: when over 150 experts classified the same foods in a 2022 study by Braesco and colleagues, they reached only fair agreement — a Fleiss kappa of about 0.32 to 0.34. If trained coders disagree, a glance across the supermarket aisle will do worse.
The pattern runs both ways. Supermarket sliced bread looks wholesome and is usually NOVA 4 thanks to the Chorleywood process. Breakfast cereal wears health claims on the box and is mostly ultra-processed too. Meanwhile the humble tin of beans — the food everyone nominates first when asked to name a UPF — is often the one that is not. Even supermarket hummus splits down the middle depending on which gums and stabilisers a given tub uses.
The lesson is not that baked beans are virtuous. It is that the ingredient list is the only place the answer lives — and that any system, app or headline that assigns a NOVA group without reading it is guessing.
