Is hummus ultra-processed? Made at home — chickpeas, tahini, olive oil, lemon, garlic — no. That is a minimally processed food under any honest reading of the NOVA system. The supermarket tub is where it gets interesting: some houmous stays in NOVA group 3, some tips into NOVA 4, and the only way to know which one you are holding is the ingredient list on the back. If you are asking whether houmous is UPF, the honest answer is: it depends entirely on the label.
That makes hummus one of the most useful foods for understanding how ultra-processing actually gets decided. It sits right on the line. This post walks through where that line is and what to look for.
Is hummus ultra-processed? The short version
The NOVA classificationgroups foods by the extent and purpose of industrial processing, not by nutrients. Group 1 is unprocessed or minimally processed food. Group 2 is culinary ingredients like oil and salt. Group 3 is processed food — group 1 foods with group 2 ingredients added, usually to keep them or improve flavour. Group 4 is ultra-processed food: industrial formulations built from derived substances and cosmetic additives.
Hummus can land in three of those four groups:
- Homemade:chickpeas and tahini are group 1; the olive oil, lemon and salt are group 2 culinary ingredients. The finished dip is minimally processed — NOVA 1 to 3 territory, and nowhere near ultra-processed.
- A simple supermarket tub: chickpeas, tahini, oil, salt, lemon juice and an acidity regulator can stay at NOVA 3. An acidity regulator or a preservative used for shelf life is not, on its own, an ultra-processing marker.
- A longer-label tub: add gums such as guar or xanthan, flavourings, or a more complex additive system, and the product typically becomes NOVA 4.
Both spellings are on UK shelves, by the way. Search engines prefer hummus; Waitrose and Sainsbury's shelf labels usually say houmous. Same chickpeas either way.
Homemade hummus: five ingredients, no debate
The traditional recipe needs nothing industrial. Cooked chickpeas, tahini (which is just ground sesame), olive oil, lemon juice, garlic, salt. Under NOVA, blending group 1 foods with group 2 culinary ingredients in a kitchen is exactly the kind of processing the framework treats as benign — the same category as making a soup or a salad dressing. There is no version of this argument in which homemade hummus counts as UPF.
The same logic applies to a chilled tub that reads like a homemade recipe. NOVA does not care whether a factory or your food processor did the blending. It cares what went in.
Supermarket houmous: where the label decides
Commercial houmous has problems homemade houmous does not: it needs to survive a chilled supply chain, hold its texture for days after opening, and hit a price point — which often means swapping some olive oil for cheaper rapeseed oil. Manufacturers solve these problems in different ways, and the solutions are what move a tub between NOVA groups.
Some UK supermarket tubs keep it simple: chickpeas, tahini, oil, salt, lemon juice or an acidity regulator such as citric acid, sometimes a preservative. That recipe is a processed food — NOVA 3 — not an ultra-processed one. Others add stabiliser gums to hold the emulsion, or flavourings to standardise taste across batches. Those are the additions that typically tip a houmous into NOVA 4.
We deliberately are not naming which brands fall on which side, because recipes change and the same supermarket often sells both kinds side by side. A standard houmous and the reduced-fat version next to it can sit in different NOVA groups. Check the tub in your hand, not the category.
Supermarket hummus additives: which ones matter
This is the part most UPF commentary gets wrong. Under NOVA, additives are not all equal. The framework draws its group 3/group 4 line at markers of ultra-processing — ingredients rarely used in home kitchens, and additives whose job is cosmetic: imitating, enhancing or standardising the sensory qualities of the final product.
- Not markers on their own: preservatives, antioxidants and acidity regulators used to keep the product safe and stable. Monteiro and the FAO explicitly place foods preserved this way in group 3. A single preservative in a houmous does not make it ultra-processed.
- Typical NOVA 4 markers: thickener and stabiliser gums used for texture (guar gum, xanthan gum), flavourings, colours, non-sugar sweeteners, emulsifiers, and industrial ingredients such as protein isolates or maltodextrin.
One genuine marker is enough for group 4 — but the reverse matters more in practice: a short label with one preservative is not a red flag. If you have read our posts on oat milk or supermarket bread, the pattern will look familiar — gums and emulsifiers doing cosmetic work are what separate the minimal versions from the ultra-processed ones. Hummus is simply the food where both versions share a shelf, which makes it the best “read the label, do not assume” example in the chiller aisle.
What to check on the label
Thirty seconds with the ingredient list settles it:
- Count the recognisable kitchen ingredients.Chickpeas, tahini or sesame paste, oil, lemon, garlic, salt, water — all fine, whatever order they come in.
- An acidity regulator or preservative alone? Still a processed food, not an ultra-processed one.
- Gums, flavourings, colours or emulsifiers?Guar gum, xanthan gum, “flavouring” — these are the additions that typically make it NOVA 4.
- Note the oil, separately.Rapeseed instead of olive oil changes the recipe's character and cost, but it does not change the NOVA group. Oil is a culinary ingredient either way.
Or skip the memorisation: Cull's UPF scannerreads the label for you. Scan the barcode and you get the tub's NOVA group, its additives, and an overall score in about a second — useful when you are comparing four houmous tubs in a chilled aisle with one hand on a trolley.
Does NOVA 4 make houmous unhealthy?
No — and this caveat is not optional. Ultra-processed and unhealthy are correlated, not synonymous. Whichever group it lands in, houmous is still a chickpea-and-sesame food with fibre and mostly unsaturated fat. A NOVA 4 houmous is not suddenly in the same league as confectionery or soft drinks because a gum appears on the label.
The wider evidence deserves the same honesty. Large studies — including a 2024 umbrella review in the BMJ covering around 9.9 million participants — consistently associate higher UPF intake with worse health outcomes. But those are observational associations, not proof of cause, and almost none of that research is about foods like hummus. NOVA itself has real reliability limits: when over 150 experts classified the same foods in a 2022 study, they reached only fair agreement (Fleiss kappa around 0.32 to 0.34) — and borderline products like houmous are exactly where coders disagree. The UK's advisory committee, SACN, reviewed the field in 2023 and urged caution rather than declaring UPF independently harmful.
So the practical reading is modest: prefer the shorter label when two tubs cost the same, do not lose sleep over the other one, and spend the attention you save on foods where the gap is bigger — yoghurt, cereal, bread. Knowing which group your houmous is in is information, not a verdict.
