Yes — nearly always. If you are asking whether plant-based meat is ultra-processed, the honest answer is that almost every burger, sausage and mince alternative on UK shelves is NOVA 4 by design: built from protein isolates, bound with methylcellulose, seasoned with flavourings. But NOVA 4 is a processing category, not a health verdict — and this is the one food where that distinction matters most.
Is plant-based meat ultra-processed?
Under the NOVA classification, a food is group 4 — ultra-processed — when it contains ingredients never or rarely used in home kitchens, or additives whose purpose is to imitate or enhance sensory qualities. Protein isolates and hydrolysed proteins are on the marker list explicitly. So are flavourings, colours and thickeners.
Now read the back of a typical meat-alternative packet. Soy or pea protein isolate as the base. An added oil for fat. Methylcellulose to bind and give bite. Flavourings to make plants taste like beef. Sometimes a colour to make them look like it too. Any one of those is enough to place a product in NOVA 4; most meat alternatives carry several. There is no marker-counting involved — NOVA is a four-group category, not a graded scale — but the direction of the verdict is rarely in doubt.
The reason is structural, not sinister. Making plants chew, sear and taste like meat is an engineering problem, and isolates plus binders are how it gets solved. The same logic applies to protein powder, which is built on the same isolates: the category is ultra-processed because of what it is trying to be.
Is Quorn UPF?
Quorn is the UK's most searched-for case, and it deserves a more careful answer than most articles give it. Mycoprotein — the base of Quorn products — is produced by fermentation, a process with a long culinary history. That alone does not settle the NOVA question, because NOVA judges the finished product, not the hero ingredient.
A mycoprotein burger or sausage is a recipe, and recipes in this category typically include binders, flavourings or stabilisers that would mark the product NOVA 4. Whether a specific Quorn product crosses that line depends on its specific ingredient list, and those lists vary across the range and change over time. We are not going to recite a label we cannot see. Check the pack — or scan it— and let the ingredients decide.
Vegan meat is NOVA 4. Here is what that does not mean.
This is where the honest version of this article diverges from the alarmist one. NOVA classifies the extent and purpose of processing. It says nothing about nutrients, and in this category the nutrients often tell a different story.
Peer-reviewed research on plant-based alternatives finds they can compare favourably to their animal counterparts on saturated fat and fibre — the exact things UK dietary advice asks you to watch. The same research argues that NOVA, applied bluntly, fails to appreciate plant-based alternatives: it files a fibre-containing, lower-saturated-fat burger in the same group as confectionery. That criticism has real academic weight, and pretending otherwise would be marketing, not information.
Two more pieces of honesty. First, the evidence linking ultra-processed food to poor health is large but overwhelmingly observational — a 2024 BMJ umbrella review covering around 9.9 million participants found higher UPF exposure consistently associated with 32 adverse outcomes, but association is not causation, and the studies were not about veggie burgers specifically. Second, NOVA itself is not perfectly reproducible: when over 150 experts classified the same foods in a 2022 study, they reached only fair agreement (Fleiss kappa of roughly 0.32 to 0.34). Composite products like meat alternatives are precisely where coders disagree.
The strongest causal evidence in the field — a small 2019 randomised trial by Hall and colleagues, 20 inpatients over two weeks per diet — found people ate around 500 kcal a day more on an ultra-processed diet than on an unprocessed one matched for calories, sugar, fat, sodium and fibre. That is a real signal that ultra-processing itself can drive overeating. It is also one short trial of 20 people, run on whole dietary patterns rather than any single category, so it cannot tell you what a mycoprotein sausage does.
Context matters here too: UK adults already get roughly 50 to 57 per cent of their daily energy from ultra-processed food, among the highest shares in Europe. Meat alternatives are only one part of that; the NOVA 4 category also spans everyday staples such as soft drinks, packaged snacks, mass-produced sliced bread and ready meals.
The UK's scientific advisers take the same measured line. SACN reviewed the evidence in 2023 and again in 2025 and did not conclude that ultra-processed food is harmful independent of its nutrient content. Its practical advice: on balance, most people are likely to benefit from cutting foods high in energy, saturated fat, salt and free sugars and low in fibre. Some meat alternatives fit that description. Many do not.
What to check on the label
Because the category spans everything from a chickpea patty to a bleeding faux-steak, the label does the work. Four things worth looking at:
- The base. Whole pulses, mushrooms or vegetables near the top of the list point towards a simpler product. Soy or pea protein isolate points towards NOVA 4.
- The genuine markers.Protein isolates, hydrolysed proteins, methylcellulose, flavourings, colours. A preservative or antioxidant on its own does not make a food ultra-processed — NOVA permits those in group 3.
- Saturated fat and salt. This is where products in the same NOVA group diverge most, and it is the part SACN actually asks you to watch. Coconut-oil-heavy burgers and salt-forward sausages exist on both sides of the meat divide.
- Fibre. One of the few places plant-based alternatives routinely beat meat. A NOVA 4 label does not erase it.
The same read-the-label discipline applies across the plant-based aisle — oat milk spans NOVA 3 to NOVA 4 depending on the recipe, and even breakfast cereal has its exceptions. Categories do not have NOVA groups. Products do.
The verdict
Plant-based meat is typically NOVA 4 — the isolates, binders and flavourings that make it work are the very markers NOVA looks for. That is worth knowing, and no one should hide it behind a green leaf on the packaging. It is not, on its own, a reason to walk past the shelf. The saturated fat, salt and fibre numbers matter at least as much, and on those, this category often holds its own.
