Is orange juice ultra-processed? Usually not. Freshly squeezed juice is NOVA 1, and the two cartons that dominate the UK chiller — pasteurised not-from-concentrate juice, and juice reconstituted from concentrate with nothing added — are typically NOVA 3 processed foods rather than ultra-processed ones. What tips a carton into NOVA 4 is not the concentrate. It is added flavourings, colours or non-sugar sweeteners, or the moment the pack stops being juice and becomes a juice drink.
This one gets misclassified more than almost any other supermarket staple. “From concentrate” has become shorthand for “industrial”, and plenty of UPF lists file every carton under group 4 on the strength of that phrase alone. The NOVA framework does not say that, and the distinction is worth getting right — partly because there is a real nutrition point about orange juice, and it has nothing to do with processing.
Is orange juice ultra-processed? The short version
The NOVA classificationsorts food by the extent and purpose of industrial processing, not by nutrients. Group 1 is unprocessed or minimally processed food. Group 2 is culinary ingredients such as oil, sugar and salt. Group 3 is processed food — group 1 foods with group 2 ingredients added, typically to preserve them or make them palatable. Group 4 is ultra-processed food: industrial formulations built from derived substances and cosmetic additives.
Orange juice spreads across three of those groups:
- Freshly squeezed: oranges and a press. Nothing added, nothing removed. This is a minimally processed food, NOVA 1.
- Pasteurised juice, not from concentrate:squeezed, heat-treated, chilled. Pasteurisation is a preservation method, which is the definition of group 3 territory — typically NOVA 3.
- Juice from concentrate, nothing added: water removed for shipping and storage, then added back. Typically NOVA 3, for the same reason.
- Juice drinks and flavoured, coloured or artificially sweetened formulations: typically NOVA 4.
What “from concentrate” actually means
Concentrating juice is an old and fairly dull piece of engineering. Water is evaporated off, usually under vacuum at reduced temperature, to shrink the volume substantially. That makes the product cheap to ship and stable to store. At the other end, water is added back to bring it to single strength, and the result is pasteurised and packed.
Removing water and putting it back is a processing step. It is not, on its own, an ultra-processing marker. NOVA's group 4 is defined by two things: cosmetic additives — flavourings, colours, non-sugar sweeteners, emulsifier and stabiliser systems used to imitate or enhance sensory qualities — and industrial ingredients rarely found in a home kitchen, such as protein isolates, glucose-fructose syrup, maltodextrin or modified starches. Reconstituted water is none of those. A carton listing only “orange juice from concentrate, water” is, on the framework's own logic, typically a processed food rather than an ultra-processed one.
There is one honest caveat. It is widely reported that some juice is stored for long periods with oxygen removed and its aroma restored afterwards using flavour fractions recovered from oranges — commonly described as flavour packs. Whether that should count as an added flavouring, and therefore as an ultra-processing marker, is genuinely debated among people who code food under NOVA, and the practice is not something you can read off a UK label. We are not asserting that any particular brand does or does not do it. It is a fair reason to treat “from concentrate” as a slightly softer NOVA 3 than a fresh press, and an unfair reason to call the whole category ultra-processed.
Disagreement on borderline foods is normal here. When 159 and 177 evaluators independently classified two lists of foods in Braesco and colleagues' 2022 study, agreement was only fair — Fleiss kappa of 0.32 and 0.34. NOVA is a useful lens, not a precision instrument, and juice sits close to one of its blurrier edges.
Where an orange drink does typically become NOVA 4
The clearer line is the one between juice and juice drink. UK labelling keeps them apart: juice is juice, while a juice drink contains a lower proportion of juice topped up with water and built back into something palatable. That rebuilding is typically where group 4 ingredients appear.
Typical NOVA 4 markers on an orange product:
- Non-sugar sweeteners— sucralose, acesulfame K, steviol glycosides.
- Flavouringsof any description, including “natural flavouring”.
- Colours such as carotenes added to standardise the shade.
- Stabiliser or emulsifier systems used cosmetically to hold a uniform cloud in suspension.
- Industrial ingredients you would never keep at home — glucose-fructose syrup, maltodextrin, modified starches.
Worth being precise about two things that trip people up. First, a preservative, an antioxidant, a stabiliser or an acidity regulator on its own does not make a food ultra-processed. Vitamin C listed as ascorbic acid, for instance, is doing an antioxidant or fortification job, and under NOVA's own rules a food preserved that way typically stays in group 3. Second, plain added sugar is a group 2 culinary ingredient, so a juice with sugar stirred into it is usually a group 3 processed food, not a group 4 one — whatever you think of the sugar itself. It is the cosmetic additives and the industrial ingredients that move the group. Or skip the label reading. Scanning the barcode in Cull's UPF scanner shows the NOVA verdict for a carton along with its additives, which is quicker than comparing four cartons in the chiller with the ingredient lists printed on the back.
The separate point: juice is a free-sugars source
Here is the part that matters more than the NOVA group, and it is a different argument entirely. Juicing an orange releases the sugars from the cell walls that held them. Once released, they count as free sugars — nutritionally closer to the sugar in a soft drink than to the sugar in the whole fruit, even though nothing was added. Juicing also leaves most of the fibre behind in the pulp.
That is why the widely published NHS Eatwell advice treats fruit juice differently from fruit: keep it to one small glass a day, counting as a maximum of one portion of your five-a-day no matter how much you drink. A carton of pure, unsweetened, NOVA 1 freshly squeezed juice is subject to exactly the same advice as a NOVA 3 carton from concentrate. If a carton has sugar added on top, that is a further nutrition point — and still a separate question from the NOVA group, since sugar is a culinary ingredient rather than a marker of ultra-processing. Processing group and sugar content are two independent readings of the same product, and on juice the sugar reading is the one that should change your behaviour.
Does NOVA 4 make a juice drink unhealthy?
Not by itself, and the caveat is worth stating carefully. Ultra-processed and unhealthy are correlated, not synonymous. Lane and colleagues' 2024 umbrella review in the BMJ, covering studies with around 9.9 million participants, reported associations between higher UPF exposure and a range of adverse outcomes, with the certainty of evidence varying considerably across them. Those are observational associations, not proof that processing causes the harm.
The UK's advisory committee has been deliberately measured about this. SACN's 2023 position statement on processed foods and health found the observed associations concerning, but concluded that limitations in the evidence make it unclear whether processing itself is the cause, rather than these foods simply tending to be high in energy, saturated fat, salt and free sugars. Its rapid evidence update, published on 2 April 2025, kept that cautious position.
Applied to the chiller, the practical reading is modest. Plain orange juice, squeezed or reconstituted, is usually not the ultra-processed food you were worried about. A flavoured, coloured or artificially sweetened orange drink typically is. And either way, the small glass a day is the advice worth remembering.
