Are sausages and bacon ultra-processed? Often not, though this is one of the categories NOVA handles least tidily. A butcher's sausage — meat, fat, seasoning, rusk or breadcrumb, a natural casing — and a traditionally cured, dry-salted bacon read as NOVA 3 processed foods on their ingredient lists rather than ultra-processed ones. Curing and salting are textbook group 3 preservation techniques, and the nitrite curing salt on the label does not change that. Plenty of supermarket sausages and formed bacons do land in NOVA 4, but for a different reason: flavourings, colours, cosmetic stabiliser systems and protein or starch fillers. The ingredient list is usually what decides.
This is one of the categories where the group 3 versus group 4 line matters most, and where it gets drawn wrongly most often. It is also a category where processed meat carries a genuine, separate health story that has nothing to do with NOVA at all.
How NOVA sorts cured and minced meat
The NOVA classificationgroups foods by the extent and purpose of industrial processing, not by nutrients. Group 1 is unprocessed or minimally processed food — fresh pork belly, a plain pork shoulder. Group 2 is culinary ingredients: salt, sugar, fat. Group 3 is processed food, meaning group 1 foods with group 2 ingredients added, usually to preserve them or make them ready to eat. Group 4 is ultra-processed food: industrial formulations built from derived substances and cosmetic additives.
Bacon fits that description closely, and salted, cured and smoked meats appear among the group 3 examples NOVA's authors give. Take pork, add salt, allow time. That is preservation, and preservation is what group 3 exists to describe — the same reasoning that keeps tinned fish, traditional cheese and salted anchovies out of group 4. A sausage sits in similar territory as long as it is meat, fat, salt, spices and a cereal binder in a casing. Mincing is not ultra-processing. Neither is stuffing a skin.
There is an honest complication here, and it is worth stating rather than hiding. NOVA's own illustrative lists — in Monteiro and colleagues' 2016 paper, and echoed on Open Food Facts' NOVA page, both linked below — name sausages, burgers, hot dogs and other reconstituted meat products as examples of group 4. Read that way, many classifiers would place any commercial sausage in group 4 on sight, whatever its ingredient list says. Our reading is the ingredient-list one: where a pack contains only meat, fat, salt, spices and a binder, group 3 is the more defensible verdict, because none of the group 4 markers the framework defines are present. That is an interpretation, not a settled answer, and reasonable assessors land differently on it.

Nitrites are not a NOVA 4 marker
This is the correction worth making. Sodium nitrite and potassium nitrate on a bacon label are preservatives. Under NOVA, preservatives, antioxidants and stabilisers used to keep a food safe or stable do not by themselves move it into group 4. Group 4 is defined by cosmetic additives — flavourings, colours, non-sugar sweeteners, emulsifier systems used to imitate or enhance sensory qualities — and by ingredients rarely found in a domestic kitchen, such as protein isolates, glucose-fructose syrup, maltodextrin and modified starches.
Curing salts are none of those. They are doing a preservation job, which is the definition of group 3. A great deal of writing about UPF gets this backwards — it is one of the most common mistakes in the genre — reasoning that because nitrites sound industrial and worry people, they must be an ultra-processing signal. They are not. Whether nitrites raise other concerns is a genuine question, and a separate one — we come back to it below. It just is not a NOVA question.
Where supermarket sausages tip into NOVA 4
Walk down a UK chilled aisle and the ingredient lists diverge sharply. Some read like a recipe. Others run to a long list of additives and fillers. The additions that typically push a sausage into group 4 are consistent:
- Flavourings— listed simply as “flavouring”, or as smoke flavouring on a smoked line. Cosmetic by definition, and a classic group 4 marker.
- Colours— used to keep a cooked sausage or a reformed bacon looking pink and appetising.
- Stabiliser and emulsifier systems used cosmetically — not one preservative for safety, but a set of additives holding a texture together that the meat alone would not give.
- Protein and starch fillers— soya or milk protein isolate, maltodextrin, modified starch, dextrose. These are industrial ingredients used to bulk out a lower meat content, and they are among the clearest group 4 signals the framework offers.
Rusk itself is not the problem. A cereal binder in a sausage is old, domestic and typically group 3. The question is whether the binder is joined by things a home cook could not buy.
We are deliberately not naming which ranges fall where. Recipes change between seasons, and the same supermarket usually stocks a short ingredient list and a long one on the same shelf, sometimes under the same brand. A premium butcher-style pack and the value pack beside it can easily sit in different NOVA groups.
Bacon: dry-cured, wet-cured and formed
Bacon splits along similar lines. A dry-cured rasher listing pork, salt, sugar and a curing salt is typically NOVA 3. Wet-cured bacon injected with brine is usually still group 3 — brining is preservation, and the water content is a nutrition and value question rather than a processing-group one.
The products that typically cross the line are the reconstituted ones: formed bacon-style slices, some bacon rashers built for catering, and smoked lines relying on smoke flavouring rather than a smokehouse. Once meat has been broken down and rebuilt with binders, flavourings and colour, the framework typically treats it as an industrial formulation. “Nitrite-free” bacon, incidentally, is not automatically cleaner under NOVA. The labelling usually means the cure comes from a nitrate-rich vegetable concentrate rather than an added nitrite salt, and some classifiers would read a concentrate used as a curing additive differently again. Check the ingredient list rather than the front-of-pack claim.
The separate point: processed meat and health
Here is where a NOVA-only reading would mislead you, so we will state it plainly. Processed meat carries its own evidence base, independent of which NOVA group a given pack falls in. Long-standing and widely published guidance from the World Health Organization's cancer agency classifies processed meat as carcinogenic to humans, and UK dietary guidance advises limiting red and processed meat. That classification reflects the strength of the evidence that a link exists, not the size of the risk to any one person, and it applies to cured and salted meat as a category — butcher's bacon included.
So a dry-cured rasher can be NOVA 3 and still be a food UK guidance suggests eating less of. There is no contradiction. NOVA describes processing; it says nothing about salt, saturated fat or the specific compounds formed in curing. Anyone using UPF avoidance as their only filter will pass a lot of processed meat straight through it. That is a limitation of the framework, not a licence.
What to check on the label
Thirty seconds with the back of the pack usually settles it:
- Meat percentage first. A high pork content with a short list behind it points to group 3.
- Scan for cosmetic entries.Flavouring, colours, sweeteners, and emulsifier systems are the group 4 tells — the same ones covered in our guide to spotting ultra-processed food on the label.
- Ignore the curing salt. Nitrite or nitrate on its own is a preservative, not an ultra-processing marker.
- Read the salt figure separately. It is a nutrition question and it does not track the NOVA group at all.

How confident should you be in any of this?
Moderately. NOVA coding is less reliable than it looks: when 159 and 177 evaluators classified two lists of foods in a 2022 study, agreement was only fair, with Fleiss kappa values of 0.32 and 0.34. Borderline meat products are exactly the kind of item that gets sorted differently by different assessors.
The wider health evidence deserves the same care. A 2024 umbrella review in the BMJ, covering around 9.9 million participants, reported associations between higher ultra-processed food intake and a range of adverse outcomes, with the certainty of evidence varying considerably between them. These are observational associations, not proof of cause. The UK's advisory committee, SACN, set out a position statement in 2023 and published a rapid evidence update on 2 April 2025; it found the associations concerning but concluded that limitations in the evidence make it unclear whether processing itself is responsible, rather than these foods simply tending to be high in energy, saturated fat, salt and free sugars.
The practical reading is modest. Buying the sausage with the shorter ingredient list is a reasonable habit, and it will often mean buying more meat and less filler. But do not mistake a NOVA 3 verdict for a health endorsement on processed meat. On this one, the two questions genuinely are different, and both are worth asking.
