Are supermarket ready meals ultra-processed? Many are — probably most of the chilled and frozen ready meals you will pick up typically land in NOVA 4. But the honest version of the answer is that the ingredient list decides, not the plastic tray, and plenty of ready meals are not ultra-processed at all. A simple chilled dish of chicken, vegetables, stock and cream can sit comfortably at NOVA 3, which is usually the same group as a block of cheddar or a tin of tomatoes in brine.
Ready meals matter more than most single categories because of volume. They are a weeknight staple across the UK, bought by people who are tired, short of time, or cooking for one. If you are trying to eat less ultra-processed food, this is a shelf where knowing what to look for changes more than anywhere else in the shop.
What NOVA is actually asking
The NOVA classificationsorts food by the extent and purpose of industrial processing, not by nutrients. Group 1 is unprocessed or minimally processed food. Group 2 is culinary ingredients — oil, salt, butter, sugar, flour. Group 3 is processed food: group 1 foods combined with group 2 ingredients, usually to preserve them or make them ready to eat. Group 4 is ultra-processed food, meaning industrial formulations built from substances derived from foods plus additives used for cosmetic effect.
Note what NOVA does not care about. It does not care that a machine portioned the meal, that it was cooked in a factory in Lincolnshire rather than your kitchen, or that it comes sealed in film. Cooking, chilling, freezing and packing are not ultra-processing markers. A casserole is a casserole whether you or a production line made it. What moves a meal into group 4 is what went into the recipe.
Why so many ready meals land in NOVA 4
A ready meal has to survive a supply chain. It needs a sauce that will not split after five days in a chiller and a reheat in a microwave, a colour that still looks like food under supermarket lighting, and a flavour that holds up despite being cooked, cooled, transported and cooked again. The industrial solutions to those problems are exactly the ingredients NOVA watches for.
The recurring group 4 markers on ready meal labels are:
- Flavourings and flavour enhancers— listed as “flavouring”, “natural flavouring”, yeast extract used as an enhancer, or monosodium glutamate. Cosmetic by definition: they are there to make the food taste more like itself.
- Colours— anything restoring the look of a sauce or a coating.
- Emulsifier and stabiliser systems used cosmetically — a stack of gums and emulsifiers holding a cream or cheese sauce together rather than preserving it.
- Modified starches— industrial thickeners rarely used in home cooking, doing the job flour or a reduction does at home.
- Glucose-fructose syrup, maltodextrin, protein isolates — industrial ingredients that rarely appear in home cooking, and strong group 4 signals wherever they turn up.
One point worth being precise about, because it is widely misread: preservatives, antioxidants and stabilisers on their own do not make a food ultra-processed. Under NOVA's own rules, foods preserved that way typically remain in group 3. It is the cosmetic additives — including stabilisers and emulsifiers used as a system to hold a sauce together — and the industrial ingredients that move a meal up a group. The ready meals that are not ultra-processed
They exist, and they are worth finding. Some chilled ranges — typically the plainer, shorter-dated ones — are built from ingredients you would recognise in your own kitchen: meat or fish, vegetables, potatoes, rice, stock, cream, butter, flour, herbs, salt. A fish pie or a cottage pie made that way is a group 1 food combined with group 2 culinary ingredients. That is typically a processed food, NOVA 3, and nothing about the tray changes it.
We are deliberately not naming which supermarket own-brand lines fall on which side. Recipes get reformulated, ranges get relaunched, and the same retailer often stocks a group 3 and a group 4 version of the same dish a shelf apart. The only reliable guide is the pack in your hand.
It is also fair to admit the framework has fuzzy edges. When Braesco and colleagues asked large panels of evaluators to classify the same foods in 2022, agreement was only fair — Fleiss kappa of 0.32 and 0.34 across two food lists, with 159 and 177 evaluators. Composite dishes like ready meals are precisely the sort of item that produces disagreement, because a single questionable ingredient in a long list can flip the verdict.
Front of pack will not tell you the NOVA group
This is the practical heart of it. “High in protein”, “source of fibre”, “no artificial colours”, “made with British chicken” and a range name suggesting home cooking are all compatible with a NOVA 4 formulation. Health claims are regulated on nutrients, not on processing, so a meal can carry several of them and still be built on flavourings and modified starch. The green traffic lights cover salt, sugar, fat and saturated fat, which is useful in its own right, but they say nothing about the ingredient list.
Turn the pack over. Twenty seconds on the ingredient list answers the question the front of pack cannot. If you would rather not do that while holding a basket, scanning the barcode in Cull shows the NOVA verdict for the product along with its additives and an overall score.
Processing and nutrition are two separate checks
A ready meal in group 4 can still be a reasonable dinner. Judge it on salt, fibre, saturated fat and how much actual vegetable is in the tray, and some ultra-processed meals do perfectly well — better than a group 3 meal that is essentially cream, butter and pastry. Salt is the recurring nutrition issue in this category, and it is worth checking independently of the NOVA group, because a short ingredient list is no guarantee of a modest salt figure.
The evidence on ultra-processed food supports caution rather than alarm. A 2024 umbrella review in the BMJ, drawing on studies covering roughly 9.9 million participants, reported associations between higher UPF intake and a range of adverse health outcomes, with the certainty of evidence varying considerably between outcomes. Those are observational associations, not proof that processing itself is the cause. The UK's Scientific Advisory Committee on Nutrition took that view in its 2023 position statement and again in its rapid evidence update published on 2 April 2025: it found the associations concerning, but said limitations in the evidence make it unclear whether processing is the culprit rather than the fact that these foods tend to be high in energy, saturated fat, salt and free sugars.
The same reasoning applies elsewhere in the chiller — it is the argument we made about plant-based meat, where a NOVA 4 verdict and a decent nutrition profile can sit in the same product.
What to do with this in the shop
Nothing dramatic. If ready meals are how dinner happens on a Tuesday, they will keep happening, and swapping every one for cooking from scratch is advice for a life most people do not have. The useful move is smaller: check the back of two or three meals you buy regularly, find the ones with the shortest, most recognisable ingredient lists, and default to those. Watch the salt separately. Add a vegetable if the tray is thin on them.
Knowing the NOVA group of a ready meal is information, not a verdict. It tells you what kind of food you are holding — and on this shelf, that is more than the packaging will ever tell you.
