E471 is an emulsifier, and it is probably in your bread. Its full name is mono- and diglycerides of fatty acids, which describes what it is made of rather than what it does. What it does is keep oil and water mixed — in a loaf, that means a softer crumb that stays soft for longer; in ice cream, a texture that survives the journey home.
It is also one of the additives most likely to put a product into NOVA group 4, which makes it worth understanding properly rather than just avoiding.
What E471 actually is
Fats are triglycerides: three fatty acids attached to a glycerol backbone. Take some of those fatty acids off and you are left with mono- and diglycerides — one or two fatty acids on the backbone instead of three. That exposed end of the molecule is attracted to water while the fatty end stays attracted to oil, which is precisely what an emulsifier needs to be.
So E471 is not a synthetic novelty. It is a rearranged fat, made industrially by reacting fats with glycerol. Small quantities occur naturally in food, and your gut produces them during normal digestion of any fat you eat.
Is E471 vegetarian?
This is the most common question about it, and the honest answer is that the E number cannot tell you. The fatty acids can come from plant oils — palm, rapeseed, soya — or from animal fat. Both are permitted, and the additive is identical either way.
Plant oils are the more common source in UK manufacturing, but the ingredient list will not tell you which was used. If a product carries a vegan or vegetarian claim, that claim covers its E471. If it does not, the ingredient list will not resolve it and the manufacturer is the only reliable source.
Does E471 make a food ultra-processed?
Usually — and this is where the reasoning matters more than the verdict. Under the NOVA classification, an additive is a group 4 marker when its purpose is cosmetic: making an industrial formulation look, taste or feel like food it is not. A preservative keeping a food safe is group 3. An emulsifier engineering the mouthfeel of a formulation is group 4.
Emulsifiers sit awkwardly across that line, because the same substance can do either job. In mass-produced sliced bread, ice cream and margarine, E471 is doing the cosmetic job, and those products are typically read as group 4. That is also why the same food made differently lands elsewhere: a bakery loaf of flour, water, yeast and salt is not group 4, and the bread aisle contains both.
Emulsifiers are also the class where NOVA coders disagree most. When Braesco and colleagues asked two panels of 159 and 177 evaluators to classify the same foods, they reached Fleiss kappa values of 0.32 and 0.34 — what the authors described as only fair agreement. Anyone telling you an emulsifier gives a clean answer is overstating the system.
Is E471 bad for you?
Approved for use, assessed at expected intakes, and that is as far as the evidence takes us for this specific additive. There is active research interest in whether some emulsifiers affect the gut microbiome, and it is genuinely unresolved — which means it is neither a reason to panic nor something to wave away.
The more useful point is what E471 tends to travel with. It rarely appears alone: where you find it you usually also find added sugars, refined flours, flavourings and a longer formulation. Diets high in ultra-processed food are associated with worse health outcomes across cohort studies — associations of varying certainty rather than proof of cause. The emulsifier is a signal about the product, not established as the cause of the problem.
What to do with this on the shelf
Do not count E numbers. Read what they are for. E471 alongside a short list of recognisable ingredients is a different product from E471 alongside glucose-fructose syrup, flavourings and colours — even though a scanner that counts additives would score them the same.
